We carry on our weekly recipes with the perfect Bank Holiday Monday breakfast - steak & egg bites. Simply prepare steak and potatoes ahead and fry the eggs while heating the potatoes and steak up. Cook over a campfire or portable stove until set. Portable, protein-packed, and bursting with flavour, these bites make for a satisfying start to any outdoor adventure.

Steak Ingredients:
2-3 Filets Cut into 1 Inch Bites
1 tbsp. Salt
1 tbsp. Pepper
5 Cloves of Garlic
4 Free Range Eggs
Olive Oil
Roasted Potatoes:
700g Diced Potatoes, Parboiled
1 tsp Salt
1 tsp Pepper
2 Cloves of Garlic
Olive Oil
Garlic Butter:
250g Melted Unsalted Butter
3 Cloves of Garlic, Chopped
10g of Chopped Parsley
2 tsp of Chilli Flakes
Salt to Taste
Step 1
Preheat the stove to around 200 degrees c and add a deep frying pan over the fire with 1L of water and salt and heat until boiling.
Step 2
When the water is boiling, add your potatoes and boil until halfway cooked (10-15 mins). They want to be poked with a fork but still have some resistance.
Step 3
Slice the steaks into 1 inch bites. Slather them in oil and season thoroughly with salt, pepper and garlic. Set to the side.
Step 4
In a bowl, mix together the ingredients for the garlic butter and set a side.
Step 5
Add a cast iron skillet with oil to the fire and preheat for 2 minutes.
Step 6
Add your steak bites and cook for 1-2 minutes on each side. Once done, pull them off and keep them warm.
Step 7
Add the parboiled potatoes to the skillet, sliced in half and cook for 5-7 minutes until browned and crispy.
Step 8
Add the steaks back to the skillet and create 4 divots for the eggs.
Step 9
Crack the eggs into the skillet and cook to your desired liking. Right before you’re done, add the garlic butter over the top of the skillet and pull off to cool.
