As the sun continues to shine this weekend, it’s only right that we have the perfect BBQ meal to enjoy over the weekend. Cooking on a low temperature for a few hours, these wings are extremely easy to do and require very little maintenance. All you need to do is marinate for a minimum of 30 minutes and then stick on the grill, letting you enjoy the sun even more without having to tend to them all day.

Serving: 4 people
Chicken Wings:
1kg of Chicken Wings
1 tbsp Salt
1 tbsp Pepper
Olive Oil
BBQ Spice Mix / BBQ Rub
BBQ Sauce:
50g Honey
150g BBQ Sauce
Blue Cheese for Serving
Chives for Garnish
1 tsp Salt
1 tsp Pepper
Step 1
Lather your chicken wings in oil. In a bowl, season the chicken thoroughly with BBQ spice mix / rub. Marinate the chicken in the fridge for 30 minutes.
Step 2
Preheat the grill to 120 degrees Celsius and add some wood chips for added smoke flavour.
Step 3
Add the wings to the smoker and cook them for about 2-2.5 hours or until they reach an internal temperature of 74 degrees Celsius.
Step 4
Take the wings off the grill and add a Dutch oven with olive oil and turn the heat up to 200 degrees Celsius.
Step 5
Add the wings to the Dutch oven and fry in batches for 2-3 minutes, flipping and stirring occasionally.
Step 6
Once fried for the first time, add to a large bowl and add the honey, BBQ sauce, salt and pepper and toss.
Step 7
Add the tossed wings back to the frying oil and fry for another 2-3 minutes.
Step 8
Once fried, toss in more BBQ sauce and serve with blue cheese and chives.
